Low-Carb Shepherd's Pie--How to Shave Your Waistline and Make Your Jeans a Size Smaller

Serving suggestion: Place a healthy portion of your meat and vegetable on a plate and top with a large spoonful of cauliflower potatoes on top.
Ingredients
1 lb ground turkey
Add:
diced onion
diced green pepper
one 24 oz can of diced tomatoes
one can of green beans
Heat entire contents until very hot. Reduce temperature and cover while you make the "potatoes."
Cauliflower Mashed Potatoes
cauliflower
1 cup of chicken bullion
about ⅓ brick of reduced fat cream cheese
salt and pepper to taste
Instructions
Preparation:
Break the cauliflower up into florets, or just chop. Cook it in a steamer until it's tender -- a fork should easily pierce it
While the cauliflower is hot, add all ingredients into blender or food processor. "Mash" the cauliflower down to as smooth a texture as you can. (I hate lumpy potatoes!)
