Pecan Tassy Pastry Shells

Ingredients
  • ⅔ cup sugar
  • 1 cup soft butter
  • 2 teaspoons vanilla
  • 2 egg whites (reserve yolks for filling)
  • 1½ cups flour
Instructions
  1. combine sugar and butter; beat until light and fluffy.
  2. Add vanilla and egg whites and blend well.
  3. Lightly spoon flour into creamed mixture while mixing at low speed -- just until blended.
  4. Grease nonstick mini-muffin tins with solid shortening (Tassies will stick otherwise).
  5. Form dough into 36 inch-size balls and press each ball into the bottom and up the sides of a muffin cup.
